2 Tbsp Cornstarch
1 1/2 Cups + 1 Tbsp sugar
1 1/2 lb. of berries
6 medium peaches, peeled, pitted, and cut into 1/2 wedges
3 cups all purpose flour
1 Tbsp baking powder
1 tsp salt
1/2 lb cold unsalted butter, cut into 1/2 inch cubes
1 cup + 3 TBsp whole milk
1/2 cup Heavy cream (for brushing top of biscuits)
Instructions
Position baking rack in the center of the oven. Preheat oven to 400 degrees F. Butter a 13x9x2 inch baking dish.
In a large bowl, whisk together cornstarch and 1 1/2 cups of sugar. Then, add berries, peaches and toss to combine well. Transfer to a baking dish and bake until bubbling, about 15 minutes.
While the fruit bakes, whisk together the flour, baking powder, and salt in a large bowl. Then, blend in butter with your fingertips until the butter is about the size of lentils. Add milk and stir until a dough forms.
Drop dough (about 1/3 cups) onto the hot fruit mixture in 12 individual mounds. Brush tops with heavy cream, and sprinkle with 1 TBsp of sugar. Bake cobbler until tops of biscuits are golden, about 25-35 minutes.
Serve warm.
